New release from famed champagne producer.

Françoise Bedel is one of the stars of the Champagne biodynamic movement. Based in Crouttes-sur-marne (Champagne’s most famous region), this grower champagne producer is an important figure in the region and has the goal of making well-balanced, high quality and harmonious wines. Using traditional methods only, the wines rely heavily on Pinot Meunier, which is quite rare compared to the outside world.

A wide selection of new French wines showcased in Mong Kok.

Sopexa Hong Kong put on their annual French Wines Trade Show 2011 earlier this month at The Langham Place hotel that put a spotlight on some new boutique wineries from France looking to break into the Hong Kong and China markets.
Winebuzz.hk was there with our video cameras and we talked to some of the winemakers and export managers from Clos Monicord, Alliance Alsace and Champagne Charpentier to learn more about what their wines are all about and what they think of the local market.

Jordi Chan pairs the Japanese-grown fungi with a red and a champagne.

Recently, I had an excellent experience with Matsutake mushrooms from Japan (松茸) with some vintage Champagne and a Burgundy red.
A wonderful dinner was hosted at Amuse Bouche, which is located in Wan Chai. The most impressive dish served that night was the Roasted Seasonal Matsutake Mushroom. Matsutake mushroom is a very rare and seasonal ingredient, which is extremely popular in Japan. With it’s heavy unique aroma and very smooth texture, the taste is reminiscent of cooked scallop. Definitely, a magical dish, and paired with the right wines only ignites the taste buds even further.
