Madam Sixty Ate is a new restaurant in Wan Chai that is definitely for those interested in an adventurous dining experience.
The chefs are former W Hong Kong and Sydney kitchen culinary directors and have definitely created some interestingly named dishes like Joseph the Duck (roasted duck and confit leg), Pig in Sheep’s Clothing (slow cooked Mangalista pork belly) and For Stanley (halibut with cauliflower, bacon and squid ink ragout).

Jordi Chan pairs the Japanese-grown fungi with a red and a champagne.

Recently, I had an excellent experience with Matsutake mushrooms from Japan (松茸) with some vintage Champagne and a Burgundy red.
A wonderful dinner was hosted at Amuse Bouche, which is located in Wan Chai. The most impressive dish served that night was the Roasted Seasonal Matsutake Mushroom. Cin Cin the Summer in with Italy’s finest.

With long balmy Summers, it is no surprise that Italy masters some fab fair weather wines. Most would naturally pair well with light and healthy Mediterranean food but don’t underestimate their ability to stand up to spicy and unusual dishes as well as sitting elegantly next to delicate fish dishes and as an aperitif.
